Sweet Italian Peppers, or friggitelli, are small green lengthened peppers which on ripening tend towards red or yellow, reaching 6-8 centimetres in length.
The flesh is very thin, the flavour is sweet and slightly piquant. If picked when they are green, they are ideal for tossing in the frying pan.
Friggitelli contain capsaicin, the main active ingredient responsible for the piquancy. Obviously, the character giving capsaicin percentage in friggitelli (or in peppers or chilli peppers), which is contained in the pips or the white part which acts as a “skeleton” (the so-called placenta), is such as only to render a pleasant taste to the palate.
